ABOUT THE ROLE >>>

Wild Hop’s core premise is “dynamic”, or ever changing. We don’t have a core range of beers – they always change. Similarly, we don’t have a “set and forget” menu – it changes regularly, based on seasons and availability of produce. We have a rough menu framework, and you will be required to collaborate with your team, and local producers, to create dishes based on this. It is an exciting challenge for the right individual.

We embrace seasonal, wood fired cooking, and offer a menu that is designed to share “family style”. The key feature in our kitchen is a Zesti wood fired rotisserie oven. While we are known for our wood fired proteins, we have also gained a strong following for our vegetarian/vegan menu options. You will be required to be passionate on all fronts. We don’t do pizzas, fish and chips, or burgers – our offer is simply just different to that.

We are not stuffy or pretentious – we want to offer real food and real value to our customers. This is an exciting opportunity to work with some of the best producers/products in the region, in a fun, casual, buzzing brewery environment.

You must have an interest in brewing and be willing to learn about the wide and revolving range of beers that our brewer is producing. You will also have the opportunity to get involved with our kitchen garden, orchard and beehives, and utilise produce as it becomes available.

We have a clear vision of what the food offering at Wild Hop looks like. We are not looking for a chef to re-invent our concept, but rather embrace what we do, and build on the great foundation built by exiting head chef, Josh De Caen, who has been with us since we opened.

You will be joining our management team as the fearless leader of our existing kitchen team of eight legendary individuals. Communication, teamwork, and respect is critical to this role, and you will be expected to lead by example and act with respect, to bring out the best in our team. We have a flat hierarchy at Wild Hop - you will be working alongside our Venue Manager and our Head Brewer, and you will report to Directors/Business Owners Ali & Chalky.

 

>>> Head Chef duties include, but are not limited to…

Working with the team to develop new dishes and menus,

Preparing, cooking and presenting dishes,

Ongoing management and training of the kitchen team,

Ensuring you and your team have high standards of food hygiene and follow the rules of health and safety,

Monitoring portion and waste control to maintain profit margins,

Stock control and ordering,

Recruitment of kitchen staff, as required,

Rostering and management of staff wages inline with budgeted expectations.

 

>>> Skills and abilities required...

Certificate 3 in Commercial Cookery,

A minimum of 2 years experience in a similar role,

A solid understanding of menu costings, profit margins, and wage costings,

Sound computer skills, including Excel, Word and Outlook,

Organisational flair and an ability to delegate appropriately,

Experience and passion in wood fired cookery,

Experience and passion in working with fresh, seasonal produce and being involved with a kitchen garden,

Interest and excited by brewing & beer

Punctual, organised and trustworthy

Professional appearance

Excellent communication skills

Attention to detail

Must maintain professional and respectful communication with suppliers and customers

 

Have a calm demeanor and a sense of humor!

Wild Hop is a day-time only venue, and our kitchen is open from 10.45am to 5pm every day. An attractive salary package will be offered, based on experience.
