
ABOUTUS
Wild Hop is a small brewery, built on our family's property in the Yallingup hills. Our overall vision was to create a brew-pub that appealed to locals and visitors alike, creating an interesting environment for the whole family to enjoy. We are family owned and operated, and are really lucky to have and epic crew that make Wild Hop work. We don't have grand plans to take over the world - we're just here, in this beautiful corner of the world, having a good time and doing what we love!!

Kid friendly, dog friendly and beer-geek friendly, we wanted to create a place that would be exciting to visit, with a rotating tap list and menu, meaning that there is always something new to try.

BREWERYBEERS
We brew on a 10 hec (1200L), three vessel, direct fire kit from Premier Stainless, and you can see the kit and fermenting vessels from our bar area. We don't package our beers into cans or bottles - they are only available at our brewpub, or in kegs at awesome venues or growler fill bottle-shops in Western Australia.

Since we decided not to package our beers, we figured we didn't need a "core range" of beers. We figured it would be more fun to batch brew, which means that each batch is different, and the tap list changes on a regular basis.
​
The only exception to this rule is our Short Shorts Czech Pilsner, which is lagered (cold conditioned) in tank for a minimum of 6 weeks - an investment in time and brewery real-estate. Plus, it's a ripper of a Pilsner, and consistently a top seller over the bar.
​
We have 11 taps for our beers (and one tap for a locally made Apple cider), and you could stumble across anything from a Plum kettle sour, to a Kentucky bourbon barrel-aged Barley Wine.

KITCHENMENU
We are lucky to live in an area with many established breweries, pubs and restaurants, that are excellent at what they do. So, when it came to piecing together the vision for our kitchen, we wanted to do something different to what is already available in our local area.

Sorry, but we don't do pizzas, we don't do burgers, we don't do fish and chips*– because there are several other venues nearby that do that already, and they do it really well.
​
Instead, we installed a beast of a wood fired rotisserie oven as the centerpiece of our kitchen, and built the menu around the concept of seasonal, ever changing dishes using fresh, local produce.
​
Our menu is designed to be shared "family style"... Maybe try our whole rotisserie chicken (free-range chickens that are brined for 48 hours with aromatics from our farm; and then slowly spun over the coals), paired with a seasonal salad and loaded duck-fat potatoes. Or a 500g Margaret River Wagu steak, cooked to perfection and sliced to share, teamed with char grilled broccolini and bang-bang Korean cauliflower. We aim to always have one seafood dish on the menu, and several vegetarian options that can be eaten with or without a wood-fired protein. We can easily accommodate a range of dietary requirements.

Our Brewers Buns are our answer to a traditional burger, and we try and have two options available at any time. Think along the lines of house smoked brisket or pulled pork with Asian slaw...

Our menu changes regularly, in the same way our tap list does. We don't publish it on our website, as it changes so often. We try to keep our Instagram and Facebook feeds updated with new dishes as they come and go, and the general structure and theme remains the same. Oh - and the beer battered pickles are a mainstay!!
