ABOUT THE ROLE >>>
You will be joining our kitchen management team, working alongside with Head Chef Josh De Caen.
You will be required to work closely with all other teams within Wild Hop on a daily basis to achieve a dynamic and exciting menu that complements what is happening in the brew house and takes advantage of what’s available in the kitchen garden. Communication, teamwork and respect is critical to this role. You must have an interest in brewing and be willing to learn about the wide and revolving range of beers that our brew house will be producing. You must also be eager and excited to get involved with wood fired cookery, as the key feature in our kitchen is a Zesti wood fired rotisserie oven. Previous experience with similar equipment is desirable, but not essential.
The Sous Chef duties include, but are not limited to…
Preparing, cooking and presenting dishes,
Managing and training any other kitchen staff working with you,
Working with our head chef to develop new dishes and menus,
Ensuring you and your team have high standards of food hygiene and follow the rules of health and safety,
Monitoring portion and waste control to maintain profit margins,
Stock control and ordering.
Skills and abilities required…
Certificate 3 in Commercial Cookery
An ability to delegate appropriately
A grasp of profit margins
Inspired by fresh, seasonal produce and being involved with a kitchen garden
Interest and excited by brewing & beer
Interest and excited by wood fired cookery
Punctual, organised and trustworthy
Excellent communication skills
Attention to detail
Must maintain professional and respectful communication with suppliers and customers
Have a calm demeanor and a sense of humor!
